If I'm So Crazy About Local Honey, Why Do I Use Sugar?

Local honey is the star of my confections, but I also use sugar. Why? There are a couple of different reasons, but only one HUGE reason. Local honey is not necessarily available all the time.


This is the time of year when the honeybees start really working. You've probably seen them out and about roaming from flower to flower collecting nectar and pollen. They've spent the winter eating the honey they made last fall, and now it's time for them to replenish their stock and increase the size of their hive.

Beekeepers want to make sure their hives are healthy. They won't harvest until their hives have more honey than they need. That's usually around June or July. They harvest again around September. Twice a year. That's

it. So if I run out before June or well after September, I cross my fingers and hope they still have a stash! So far I've lucked out!
